In the spirit of the holiday season, here’s a sweet potato pie recipe I received from my sister years ago that I now use as my own. Have an awesome holiday season everyone.
Recipe:
3 medium sweet potatoes. Boil until fork tender
3 eggs
1.5 sticks of butter. Leave the butter at room temperature
1.5 cups of sugar
Two deep dish crusts
¼ - ½ tsp of cinnamon
1/8 tsp of nutmeg
Vanilla flavor – large eating spoon
Lemon flavor – large eating spoon
Directions:
Cook at 325˚or 350˚for an hour
It’s done when it’s set or solid in the center, not runny
Put foil around the top edges of the crust until the last 10 minutes or so to prevent the edges from cooking too fast/burning
